IntroductionLearned this recipe from my Italian Grandmother, but updated it a bit. Learned this recipe from my Italian Grandmother, but updated it a bit.
8 oz Small Spelt Pasta Shells(or other type of small pasta)
1 onion chopped
2 TBSP olive oil
2 cups frozen peas
1 can, 15.5 oz, tomato sauce
1 TBSP dried Basil or a cup of fresh
2. Saute the onion in the olive oil.
3. When pasta water boils add peas for two minutes. Then add peas to onions.
4. Add tomato sauce and basil to the peas and onions and cook on low heat while pasta cooks.
5. Cook pasta according to package directions then drain and add to the pea mixture. Add a ladle or two of pasta water to the mixture and serve with lots of parmesan cheese.
Makes four servings.
