Introduction

A tasty summer salad high in fibre and protein; good on it's own or in a pita. A tasty summer salad high in fibre and protein; good on it's own or in a pita.

Ingredients

    One medium tomato, cubed
    0.4 of a cucumber, cubed
    One small onion, chopped
    Two cloves of garlic, chopped fine
    Can of Complements six bean blend, drained
    Two tbsp of extra virgin olive oil
    Four tbsp of balsamic vinegar
    Salt and pepper as needed
