1t canola oil
1/3 of an onion, diced
3 cloves garlic, minced
2 morningstar farm veggie patties, chopped into little pieces
1 c zucchini or other summer squash sliced into 1/4" thick circles and quartered
4 egg whites
2. Meanwhile whisk eggs and egg whites in a bowl until combined.
3. add egg mixture to pan stir to scramble cover and cook until the eggs are done to preference 5 to 7 minutes stirring occasionally. Top with cheese and serve with salsa.
