Introduction

A cucumber with veggie salad, my mom said it is a german dish my grandma use to make. I americanized it a bit by adding a few tbsp of italian dressing. Number of Servings: 8

Ingredients

    2 cucumbers sliced thin
    1/2 C of onions coarsly chopped
    1/2 C of green bell peppers coarsly chopped
    1/4 C of celery chopped
    4 Lg baby carrots cut in strips

    4 Tbsp of kraft italian dressing
    1/4 C of cider vineger
    1/4 C of white sugar
    2 Tbsp of lemon juice
    2 Tbsp of parsley

Directions

1 Mix together liquid ingredients in bowl that has a lid.
2. chop up veggies. Add to mixture in bowl
3. Add parsley and mix well
4. Refrigerate for a few hours

Makes aboutt 8 servings

    Just want to say thank you for sharing, just love this recipe...I did make it my own by cooking the vinegar, lemon, sugar. Instead of using the dressing ....I use 1 tbsp of the dry Italian seasoning mix. This was great again thank you :) - 5/26/10

    love this salad! I but i like yellow and red bell peppers sweet ones,so I might just add a salad to my newly made cookbook, but with my own recipe! Feel free to try my version! - 8/22/09

  • I make this and add a can of garbanzo beans for a quick and easy lunch. Instead of dressing, I sprinkle it with dill and a little drizzle of olive oil. It's delicious with toasted whole wheat pita bread. - 7/4/12
