Ingredients

    1 cup of whole wheat flour (or white flour)
    1 5.3 oz container of Trader joe's organic nonfat plain yogurt
    1 cup trader joe's organic lowfat cottage cheese
    1/2 tsp salt
    1 TBSP organic cane sugar
    4 eggs, slightly beaten

Directions

In a large batter bowl, mix the flour, salt, and sugar. Add the yogurt and cottage cheese, as well as the beaten eggs. Fold until just moistened.

In a large skillet or on a pancake griddle, heat to moderately high heat. Spray with non-stick cooking spray, and drop batter (will be thick) onto skillet, about 1/4 cup per pancake. Spread into round shape, and cook well on both sides, until browned and set. Oven can be set at 200* F in order to keep cooked pancakes warm, while others are cooking. Makes about 3 pancakes (4" or so) per person.
