Spicy succotash

Introduction

This is not exactly succotash but the combination of spices make it seem like a southwest take on one with no fat and low calories This is not exactly succotash but the combination of spices make it seem like a southwest take on one with no fat and low calories
Number of Servings: 4

Ingredients

    1 can chick peas-drained
    1 can corn-with juice
    1 can tomatoes (14 oz)
    1 cup canned or frozen lima beans
    2 TBSP salsa
    Basil, salt, pepper to taste

Directions

Combine all ingredients but drain the chick peas. Leave al the other juices. Simmer for about 20-30 minutes on high until all veggies are soft and tender. Delicious as a side or with a protein. It goes well with fish, beef and chicken. I have also had it cold. Yield is about 1 cup per serving for 4 servings.
