Extra Good Cheesecake

Ingredients

    1/2 c. Graham crackers
    1 Tbsp. I Can't Believe it's not Butter
    1/2 c. sugar, divided
    8 oz. Neufachatel Cream cheese
    1/2 c. ricotta cheese, blended until smooth
    1 Tbsp. T.Marzetti Caramel apple dip
    2 med. eggs

Directions

Mix graham cracker crumbs with 1 Tbsp. sugar. Add Smart Balance, melted. Mix and press into bottom of springform pan. Set in refrigerator while preparing filling. Mix sour cream and 3 Tbsp. sugar. Set aside. To prepare filling, blend ricotta cheese until very smooth. Add cream cheese, softened, caramel dip, and remaining sugar. Mix well. Add eggs one at a time, mixing well after each. Pour filling into chilled springform pan. Spread sour cream mixture over top of filling. Put a pan of water on bottom shelf of oven, place springform pan on cookie sheet to catch spills. Bake at 350 degrees for approx. 45 min. or until cheesecake begins to set, but is still softset. Remove from oven, remove springform pan from cookie sheet and cool completely. After cool, put in refrigerator until thoroughly chilled. Release cheesecake from springform pan onto pretty round platter or cake plate. Cut into 16 small slices and serve with your favorite coffee.
