Vegan Banana Bread

Introduction

Made for our daughter with LOTS of allergies. Since she can not eat very much high fat or processed foods, I am less concerned for her with the calorie count but you can reduce the sugar if desired. Ingredients

    1/4 cup soy milk (plain or vanilla if desired)
    1 tsp apple cider vinegar

    2 cups unbleached flour
    1/2 tsp baking soda
    1 tsp cinnamon
    1/4 tsp allspice
    1/2 tsp salt

    1/2 cup br sugar
    1/2 cup white sugar
    1/2 cup Smart Balance Orgainic (vegan margarine)
    3 ripe bananas (the blacker the better)
    1 tsp vanilla

    1/2 cup nuts (optional, nuts are not included in calorie count, we can't use tehm but they can be added.)

Directions

Mix Apple cider vinegar with Soy milk and let sit while preparing other ingredients.

Preheat oven to 350. Spray 8x4 inch bread pan with non-stick cooking spray.

SIFT together flour, soda, salt and spices (important step!)

Cream SmartBalance (vegan-margarine) and sugars. Add bananas, soy milk and vanilla.

Mix the wet ingredients with the dry. I do this by hand to not toughen the batter.

Bake at 350 for 60-70 minutes. Toothpick should be clean.

Cut into 16 pieces (seven slices width wise and one length wise)
