Apple Muffins

Introduction

Delicous low calorie muffins! Delicous low calorie muffins!
Number of Servings: 6

Ingredients

    1/2 cup rolled oats (not instant)
    1/2 cup nonfat milk
    1/2 cup flour
    1/4 cup brown sugar
    1/4 cup unsweetened applesauce
    1 egg white
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    1/4 tsp cinnamon
    1/4 tsp sugar
    1 sm apple chopped up

Directions

Soak oats in the milk for 1 hour. Preheat oven to 400 degrees. Mix oats mixture w/ egg whites, applesauce, and chopped apples. Mix all dry ingredients together except the cinnamon and white sugar. Then mix the wet and dry ingredients, don't over mix or muffins will be stiff. Coat muffin pan w/ non-stick cooking spray and fill muffin cups w/ mixture. Sprinkle cinnamon and sugar on top of muffins. Bake approx. 20 mins.
