Chicken with sauteed tomatoes and gnocchi

Ingredients

    1 lb boneless, skinless chicken breast
    salt and pepper
    1 Tbsp olive oil
    16 oz fresh gnocchi
    3 cloves garlic, sliced
    2 cups cherry tomatoes, halved
    5 oz frozen spinach, thawed and squeezed dry
    1/2 cup white wine

Directions

Heat grill over high heat. Sprinkle salt and pepper on chicken. Grill until brown and cooked through, about 6 minutes per side.

Meanwhile, heat saute pan over medium high heat. Add oil heat until it shimmers. Add gnocchi and cook until bottoms begin to brown, about 3-5 minutes. Add garlic, tomatoes, and spinach, and sautee until tomatoes are soft and everything is heated through, about 5 minutes. Add wine and deglaze pan, scraping up brown bits. Cook until wine is almost evaporated. Season with salt and pepper to taste.
