Stuffed breakfast sandwich

Introduction

A great, low-cal breakfast, worthy of guests. A great, low-cal breakfast, worthy of guests.
Number of Servings: 1

Ingredients

    1 egg, white only
    1 whole wheat english muffin
    1/2 c. fresh (raw) spinach
    3 slices of tomato (small)
    1 tbsp. hummus
    1/4 c. California avocado, sliced
    1 slice fat-free turkey

Directions

Toast english muffin and spread 1/2 tbsp. on each half. Cover with spinach. While slicing the avocado and tomato, fry the egg (no oil, or spray). Layer the avocado, tomato, turkey, and fried egg on one side of the sandwich, then cover with spinach/muffin topper. Serve with a cup of skim milk or soymilk, for a great 400 calorie meal!

Recipe makes 1 sandwich.
