General Tso's Chicken

Introduction

A lightened up version of the classic Asian dish. A lightened up version of the classic Asian dish.
Number of Servings: 4

Ingredients

    3/4 C low sodium chicken broth
    2 Tbs corn starch
    2 Tbs sugar
    2 Tbs low-sodium soy sauce
    1 Tbs white wine vinegar
    1/2 tsp ground ginger
    2 tsp canola oil
    2 medium scallions, chopped
    2 garlic cloves, minced
    1/2 tsp pepper flakes
    1 lb chicken breasts, cut into bite sized pieces

Directions

In a medium bowl, mix together broth, corn starch, sugar, soy sauce, vinegar and ginger. Set aside.

Heat oil in a wok or large skillet over medium high heat. Add scallions, garlic, and pepper and cook 2 minutes. Add chicken and cook until browned, about 5 minutes.

Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.

Serve over brown rice. Serves 4.
