enchelada bake

Ingredients

    boneless, skinless chicken breast
    old el paso taco seasoning
    enchilada sauce
    fat free sour cream
    fat free cheddar cheese (shredded)
    brown rice (cooked)
    whole wheat tortillas

Directions

slice chicken breast into small cubes and cook in skillet. Once fully cooked, add 0.5 cup water and taco seasoning mix. let simmer till juices boil off, stirring occasionally. Add 1 cup enchilada sauce and cooked rice. Put half of this mixture in baking dish, top with whole wheat tortillas. Layer with sour cream and shredded cheese, repeat this layering until all ingredients are used. Bake at 350 for 20 minutes, or until cheese is melted.
