Turkey and Roasted Red Pepper Meat Loaf

Ingredients

20 oz Ground Turkey (1.25 lbs)
1 small yellow onion, diced
1/2 cup bread crumbs
1 egg beaten
1/2 cup Parmesan Cheese
2 Tbsp Dijon Mustard
1 cup flat leaf parsley
1 7 oz jar roasted red peppers cut into 1/2 in pieces
Kosher Salt and Pepper
Directions
Heat oven to 400.
Combine Turkey, onion, bread crumbs, egg, Parmesan, mustard, parsley, red peppers, salt and pepper in a large bowl.
Shape the meatloaf into an 8 inch loaf and place in a baking dish. Bake until no longer pink (internal temp at 165 degrees F), about 45 minutes. Transfer to a cutting board and let rest 15 minutes before serving.
