Sweet Potato Chicken Tenders

Introduction

I get bored with the same old bread crumb-covered oven fried chicken, so I went rummaging through my cabinets and came up with this recipe. I get bored with the same old bread crumb-covered oven fried chicken, so I went rummaging through my cabinets and came up with this recipe.
Number of Servings: 4

Ingredients

    24 oz. boneless, skinless chicken breast (approximately 4 6 oz. halves)
    1 pouch Betty Crocker Instant Sweet Potato Mashed Potatoes
    1 egg white, lightly beaten
    dash salt
    dash black pepper
    chili powder and cayenne pepper to taste, if desired
    Olive oil cooking spray

Directions

Preheat oven to 450 degrees and prepare a baking sheet with aluminum foil sprayed with olive oil cooking spray. Pour sweet potato flakes onto a large plate or bowl. Trim all visible fat from chicken and cut into strips (approximately 3 strips per breast). Season with salt and pepper (and chili powder and cayenne, if using). Dip each chicken strip into the egg white, then roll in sweet potato flakes until covered. Place on baking sheet. Once all chicken strips are on the baking sheet, spray with olive oil cooking spray. Bake for 18 minutes or until no longer pink in center.
