IntroductionTried this 18 years ago at a Santa Fe food festival, loved it and did my best to copy it. Tried this 18 years ago at a Santa Fe food festival, loved it and did my best to copy it.
1 pound chicken breast, cut bite size
3 C rice
1 C half and half
1 C Green chiles (fresh roasted or frozen, canned doesn't taste right)
2. Heat oil and saute green chiles over medium heat and remove.
3. Saute chicken in olive oil over medium heat
3. Add cooked rice, green chiles and cream with chicken in pan and heat until warm
