Garlic Parmesan Scallops

Number of Servings: 4

Ingredients

    454 g (1 lb) of sea scallops
    2 tsp olive or other vegetable oil
    2 tbsp butter or margarine
    1 cup scallions/green onions
    1/4 cup flour
    1 tbsp minced garlic (obviously adjustable to taste)
    1/2 cup grated Parmesan cheese

Directions

Pan sear the scallops in 2 tsp oil. Remove from pan.

Add butter to pan and saute the green onions in the butter. Add flour and cook for a couple minutes before gradually adding in the milk. Add the garlic and salt and pepper to taste and bring to a boil so it starts to thicken. Sprinkle in the parmesan cheese and allow it to melt into the sauce. Put the scallops back in and allow them to poach until ready.

Serve over brown rice or noodles.
