Rumbamel's Quick Chicken and Beans

Introduction

I had some leftover grilled skillet chicken with garlic, salt and pepper on it and decided to add some beans. I then began adding other things like tomatoes and corn. It all came together like a chili. I topped it with sour cream, salsa and cheese YUM! Ingredients

    -100g chopped onion
    -1t minced garlic
    -1 can 15 oz black beans, drained and rinsed
    -1 can 15.25 oz kidney beans, drained and rinsed
    -1 can 15.25 oz corn, drained and rinsed
    -1 can 14.5 oz petite diced tomatoes undrained
    -1 T cumin
    -8 oz diced cooked chicken already seasoned with salt, pepper and garlic powder (I had this on hand, but you can make this or add the seasonings as you like)

Directions

--Chop onions and add to a large pot with the garlic. Saute until tender. Add the rinsed ingredients and stir. Add the tomatoes, chicken and cumin and stir again. Cover and cook over med/low for about 5-7 min. or until thoroughly heated, stirring occasionally.

--Makes 8 servings of 1 C each.
