Vivian's Summer Borscht

Introduction

A very hearty and yummy soup A very hearty and yummy soup
Number of Servings: 4

Ingredients

    I cup of chopped
    carrots
    beets (more if you please)
    yellow potatoes
    greem beans (and yellow if you please)
    onion
    5-7 sprigs of dill
    1 cup of fresh or frozen peas
    1 tsp salt
    1 tsp pepper

Directions

Cut all vegitable in bite size pieces. Bring pot to a rapid boil for 10 minutes. Tear sprigs of dill off and straigt into the pot. Reduce heat to a simmer to 1.5 to 2 hours. All vegitable should be soft and your house should have the aroma of the soup. Add a dallop of low fat sour cream on the side if you wish. No limit on dill. If you like dill add more.
