Ingredients

    Onions, raw, 1 small
    *Peppers, sweet, red, fresh, 1.5 large (2-1/4 per lb, approx 3-3/4"
    Zucchini, baby, 3 large
    Mushrooms, fresh, 10 medium
    Parsley, .25 cup
    *Extra Virgin Olive Oil, 1 tbsp
    *Ground Cumin, 1 tsp
    *Kosher Salt, 0.25 tsp
    Pepper, black, 1 tsp
    Galic powder, 1 tsp
    Chopped garlic, 1 tsp

Directions

chop veggies until all are approx the same size

mix veggies in a large bowl with spices and oil

line baking sheet with aluminum foil for easy clean up

bake at 350 for approx 35-40 min or until veggies are tender.
