500g Pork mince
50g LSA (Linseed, Sunflower and Almond)
2 tbsps Psyllium Husks
250g Bread crumbs
250g Spinach (frozen)
125g Ricotta Cheese
1 Whole Egg
4 Sheets of Ready to Bake Puff Pastry
Mix all ingredients except the puff pastry together.
Take one sheet of puff pastry and cut it in half. Make a sausage with one eighth of the pork mixture and lay it across one of the halves so that you can roll the pastry around the mixture. Brush the top and bottom together with milk. Cut into three rolls. Place on baking tray leaving enough room for the pastry to expand. Continue to do this with remaining ingredients.
Bake in prepared oven for 25 minutes or until golden.
