Greek Chicken Pasta

Introduction

Just the right amount for two - or dinner for one & leftovers for lunch! Just the right amount for two - or dinner for one & leftovers for lunch!
Number of Servings: 2

Ingredients

    6 oz pasta, uncooked by weight
    6 oz chicken breast, cubed (I use pre-cubed from Schwan's)
    1 T White balsamic vinegar
    6 cloves minced garlic
    1 c mushrooms, sliced
    1 c cherry tomatoes, halved
    c chicken broth
    Kalamata olives, about 15
    1/4 c feta, crumbled

Directions

Cook pasta. In separate pan, cook chicken and garlic in vinegar over low heat until chicken begins to brown and garlic is tender. Stir often - DO NOT LET GARLIC BROWN. Add tomatoes, mushrooms and broth and cook until most of the liquid is gone. Add pasta and olives, and toss. Top with feta. Makes 2 -1.5 c servings.
