Rice and Bean Burrito

Introduction

I love spicy food and find any cheap, quick excuse to have it. This recipe can be changed and altered as you please. You can replace the hot sauce with the peppers of your choice.

This is a very carb heavy meal. Since my diet is generally high protein, I have trouble making my carb count for the day. This helps me fill that total. If you'd like less carbs, omit half the rice.

Note: Feel free to add more vegetables and salsa to this! Stuff it with as many fiber-rich goodies as you can find.

Ingredients

    1 Mission Plus Whole Wheat Tortilla
    1/3 c Refried Beans, 98% Fat Free
    1/2 c Minute Brown Rice
    1/6 c Mexican Cheese Blend
    1 tsp Tobasco
    2 tbsp fat free sour cream
    1/2 c water

Directions

1. In a small sauce pan, bring 1/2 c. water to a boil.

2. Add rice. Turn heat down to low, cover and let simmer. After five minutes, move off heat.

3. Spread beans and sour cream to tortilla.

4. Add half the cooked rice.

5. Sprinkle cheese and Tabasco sauce or peppers.

6. Roll. Add remainder of the rice as a side dish.
