makes 12 generous slices . Tjis was adapted from Zuccini rice bread from Laurels Kitchen .Preheat oven to 375degrees. Grease an 8 x4 loaf pan. Soak chopped raisins in 1 cup hot water. Sift dry ingredients add flax meal after sifting. Cream honey and butter add egg and lemon peel. Strain raisins and measure the soaking water to /4 cup . Mix with the grated zucchni and raisins. Stir the flours and the zucchini mixture alternatinly to the egg mixture. This is a moist bread . My crust seemed dry so I brushed top with butter while still hot. Ooh it is yummy.
