Tabouleh

Number of Servings: 4

Ingredients

    Mince 2 cups parsley
    Chop 1 yellow onion
    Chop 1 cucumber
    Chop 1 tomato
    Mix together and add olive oil and lemon juice

    Boil 2 cups water, add 1 cup couscous, cover, and take off the heat. Let rest five minutes then add 1 tbsp olive oil and fluff with fork. Put in refrigerator to cool.

    Mix couscous with vegetables and season with salt and pepper.
