Warm Asian Noodle Salad

Introduction

This warm asian inspired side dish could easily be turned into a main dish by adding a protein such as cooked chicken or shrimp. This warm asian inspired side dish could easily be turned into a main dish by adding a protein such as cooked chicken or shrimp.
Number of Servings: 4

Ingredients

    4oz. Whole Wheat Spaghetti
    1/2 C red pepper, thinly sliced on the bias
    2 scallions (white and green part), thinly sliced on the bias
    1T toasted sesame seeds

    ***THE DRESSING***
    1T of the hot cooking liquid from the pasta
    2T orange juice
    1tsp sesame oil
    2T smooth natural peanut butter
    2T soy sauce
    1 garlic clove, grated
    1T fresh ginger, grated
    1/4 tsp cayenne pepper



Directions

1.) Cook pasta according to package directions.

2.) While pasta is cooking wisk together the dressing and set aside.

3.) When pasta is cooked, drain and toss the dressing with the pasta, peppers and scallions. Top with toasted sesame seeds and enjoy!
