Rita's Low Fat Buttermilk Pancakes

This is a delicious low fat version. These make up light and fluffy even without the egg. This is a delicious low fat version. These make up light and fluffy even without the egg.Number of Servings: 9
Ingredients

1 1/4 C WW Flour
1 Tblsp Splenda
1/2 tsp Salt
1 tsp Baking Powder
1/2 tsp Baking Soda
2 Tblsp Corn Starch (replaces 1 whole egg)
1/2 tsp. Cinnamon
1 1/2 C 1% Buttermilk (reduce by 1/4 C if using egg)
1 Tblsp Canola Oil
1 Tblsp Applesauce, Unsweetened
1 tsp Vanilla Extract
Directions
Put all dry ingredients together in a large bowl and mix well with a fork. In a small bowl mix the rest of the ingredients together and add to the flour mixture. Stir just until mixed.
Scoop out with 1/4 C measure and cook on 400F griddle about 5 minutes per side.
Enjoy with some unsweetened frozen fruit that has been heated in the microwave and a little E.D. Smith no sugar added syrup.
Also great toasted for a snack later in the day.
