Raspberry Oat Muffins

Ingredients

1 c old fashion rolled oats (not instant)
1 c skim milk
1c whole wheat flour
1/2 c brown sugar
2 Tbsp flaxseed meal
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 c unsweetened applesauce
2 egg whites
1 tsp vanilla
1 c raspberries
1 tsp sugar
Directions
Soak the oats in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin tins with cooking spray.
Combine the dry ingredients in a mixing bowl and whisk together.
Add the applesauce, egg whites, and vanilla to the oats/milk and mix.
Add the wet ingredients to the dry ingredients and mix. (Do not overmix the batter, or the muffins will be tough.)
Fold in the raspberries.
Spoon muffin mixture into the muffin tins.
Sprinkle the sugar on the tops.
Bake for 20 minutes or until done.
Remove from pan after 10 minutes and cool on rack. Enjoy!
