Fried Salmon Patties

Ingredients

    1 pouch Bumblebee pink salmon
    1/4 cup chopped onion
    1/4 cup Quaker yellow corn meal
    1/4 cup Egg Beaters
    3 tbsp light mayonnaise
    1/4 tsp red or cayenne pepper
    1 dash salt and black pepper
    Spray canola oil

Tips

I like to have these over toast with a fried egg beater and my light hollandaise sauce. Makes a great brunch


Directions

Mix salmon, onion, corn meal, flour, mayo and egg together until well blended.

Divide into 4 patties on the heated and sprayed frying pan.

Cook over medium heat until browned on each side.

2 patties per serving
