Mom's Zucchini Pie

Introduction

This is delicious for breakfast, hot or cold, and the zucchini can be switched out for peppers, mushrooms or other veggies. This is delicious for breakfast, hot or cold, and the zucchini can be switched out for peppers, mushrooms or other veggies.
Number of Servings: 8

Ingredients

    3 cups zucchini, chopped
    1/2 cup onion, chopped
    1/2 cup Bisquik
    4-6 eggs (I use 5)
    1/2 cup canola oil
    1/2 cup parmesan cheese
    salt, pepper, parsley to taste

Directions

Pre-heat oven to 350
Spray and flour a 9" pie plate
Mix everything together, pour in a 9" pie plate
Bake for 40 minutes
Cut and enjoy. Serves 8

  • I would cut down on the onion the next time I made this. It's more "eggy" than a spinach pie I used to make with bisquick and that might take me a bit to get used to. But still good. I added a couple of chopped sundried tomotoes for more flavor. - 10/4/09
