Ingredients

    3 tbsp onion powder
    3 tbsp garlic powder
    2 bay leaves
    2 green bell peppers, chopped
    2 stalks celery, chopped
    2 carrots, chopped
    1 jalapeno pepper, chopped
    1 can kidney beans
    1 can black beans
    1 can chickpeas
    3 cups water
    2 (28 oz) can diced tomatoes
    1 (6 oz) can tomato paste
    1 pound tofu, crumbled
    1 bag frozen corn
    1 apple, chopped
    2 tsp coriander
    2 tbsp chili powder
    2 tsp coriander
    1 tbsp blackstrap molasses
    2 tsp dried cilantro

Directions

Cook onion, garlic, bay leaves, bell peppers, clery, carrots and jalapeno pepper for 5 minutes. Add beans, water, tomatoes, tomato pste, tofu, corn, apple, remainsing seasonings, molasses and cilantro. Cover and immer for 15-20 minutes.
Makes 11 (2 cup) servings.
