Chicken Cacciatore

Ingredients

    1-2 Tbsp. olive oil
    1 large onion, peeled and sliced
    2 garlic cloves, peeled and minced
    1/4 tsp. crushed red pepper
    1/4 tsp. dried oregano
    1/2 tsp. dried basil
    3/4 tsp. dried thyme
    1 3/4 lb. boneless, skinless chicken breast cut into bite-size pieces
    1-2 large bell peppers, seeded and sliced into strips (I like to use many colors!)
    2 cups diced tomatoes

Directions

Pour some olive oil into a large skillet (about 1-2 tsp.) Heat over medium-high heat; add onions and cook until soft and slightly browned.
Add garlic, crushed red pepper, oregano, basil and thyme and cook, stirring, about 1 minute.
Put the chicken pieces into the pan; add a little more olive oil to the pan, if necessary to keep it from sticking.
When the chicken is browned, add the bell peppers. Stir-fry a couple minutes, then add the tomatoes. Stir well; cover and let cook until chicken is cooked through and peppers are as soft as you like.
Add salt, to taste.
Serve hot, over rice or pasta.

This feeds my family of 10. I'm guessing about 1 to 1 1/2 cups per serving.
