Yummy Veggie-full Burritos

Introduction

I made this up based on a soup recipe that I really like and added more veggies. Turned out great! I made this up based on a soup recipe that I really like and added more veggies. Turned out great!
Number of Servings: 14

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 small - diced
    Garlic, 3 cloves
    Jalapeno Peppers, 1 pepper - diced
    Green and Red Bell Pepper, 1 each - diced
    Carrots, 1/2 cup - diced
    Celery, 2 stalks - diced
    Turkey, Ground turkey, 93% lean, 16 oz
    Cumin, 1 Tbsp
    Cilantro, fresh, 1/4 cup
    Black Beans, 1 can, drained and rinsed
    Brown Rice, medium grain, 2 cup - cooked
    No Salt Added Diced tomatoes, 1 can
    Taco Seasoning, 1 packet
    14 6-7" flour tortillas

Directions

Heat oil on medium high in large pan, add garlic, onion, peppers, carrots, and celery. Cook 5 minutes or until softened. Turn heat down to medium. Add ground turkey and cumin, cook until browned. Add the rest of the ingredients and cook for another 5 minutes. Place 1/2 cup of mixture into 6-7" flour tortilla and roll.

Makes 14 half-cup servings.
