Blue Cheese Potatoes (Slow Cooker)

Ingredients

    2 lbs Red Potatoes
    1 1/4 cups Scallions, divided
    1 Tbsp Olive Oil, divided
    1 Tbsp Vegetable Broth, divided
    1 tsp dried Basil
    1/2 tsp Salt
    1/4 tsp black pepper, black
    1/4 cup Reduced Fat Blue Cheese

Directions

Layer potatoes, 1 cup scallions, 1/2 Tbsp olive oil, 1/2 Tbsp vegetable broth, basil, salt & pepper in slow cooker. Cover: cook on LOW for 7 hours or HIGH for 4 hours.

Turn slow cooker to HIGH. Gently stir in cheese and remaining oil & vegetable broth. Cook 5 minutes longer to allow flavor to blend. Transfer to serving platter and top with remaining 1/4 cup scallions.

Yield: 5 Servings
