Baked Eggplant "parmesan"

Introduction

This is a super healthy, quick and tasty way to have eggplant without the added fat from frying This is a super healthy, quick and tasty way to have eggplant without the added fat from frying
Number of Servings: 4

Ingredients

    1 medium eggplant, sliced
    1 tbsp olive oil
    1 c. Classico Tomato Basil sauce (or preference)
    1 tbsp grated parmesan cheese

Directions

Preheat oven to 400
Spray the bottom of a 9x13 baking dish with cooking spray,
Slice eggplant in to 1/4 in. slices and arrange one layer in dish. Drizzle sparingly with olive oil; spread some of the sauce in a light layer over the top. Repeat until you are out of ingredients. Sprinkle parmesan cheese over the top and bake for 30 minutes.
