2 Cans 99% Fat Free Chicken Broth
1 Can Diced Tomatoes (with or without chilis)
1 Can Red Kidney Beans, rinsed well
1/2 Cup Corn Kernels
1/2 Cup chopped carrots
1 Cup Water
1 tsp Taco Seasoning (or to taste)
Sour Cream for top (optional)
Cook rice per package directions
Put rest of ingredients in pot and simmer 30 minutes or until carrots are tender. Add rice and heat through.
Top with dollop of sour cream if desired.
