Oatmeal Pancakes

Introduction

From a German friend, my best memory of her now. She called them Dags, and this recipe has been in her family for a long time. These are especially good topped with honey, or applesauce and cinnamon. Number of Servings: 16

Ingredients

    3 c. uncooked oatmeal any style
    3 c. buttermilk, low fat
    3 eggs
    3 t. baking soda
    1/2 t. salt
    1/4 c. flour

Directions

Soak oats with buttermilk overnight. In the morning mix the dry ingredients together. Set aside. Blend in eggs with oat mixture. Add more buttermilk if necessary. Add dry ingredients. Cook on a dry skillet sprayed with Pam just like you would a pancake. Serve warm.
This makes about 16 large pancakes about 8" in diameter.
