Very Healthy Blueberry Bran Muffins

Ingredients

1.5 cup wheat bran
1 cup non fat milk
1 egg plus 1 egg white
2/3 cup brown sugar, gently packed
1 tbsp vanilla extract(yes, it's a lot, but I find it adds flavor)
1 4 oz container of blueberry/apple unsweetened Mott's Fruitsations (or any unsweetened applesauce)
1 tbsp vegetable oil
1/2 cup flour (recipe is calculated with white flour, but you could definately use whole wheat).
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cups blueberries, fresh or frozen
Directions
Makes 12 generous sized muffins.
Mix bran and milk. Set aside for 10 minutes.
Beat egg, egg white, oil, Fruitsations (or apple sauce), vanilla and brown sugar together. Mix in bran and milk mixture. Mix in dry ingredients just until mixed, and fold in blueberries. Bake in non stick pan or use paper liners.
Bake at 375 for 20-25 minutes.
