Very Healthy Blueberry Bran Muffins

Introduction

Similar to other non fat recipes but this one uses a bit of fat which helps with the texture. Similar to other non fat recipes but this one uses a bit of fat which helps with the texture.
Number of Servings: 12

Ingredients

    1.5 cup wheat bran
    1 cup non fat milk
    1 egg plus 1 egg white
    2/3 cup brown sugar, gently packed
    1 tbsp vanilla extract(yes, it's a lot, but I find it adds flavor)
    1 4 oz container of blueberry/apple unsweetened Mott's Fruitsations (or any unsweetened applesauce)
    1 tbsp vegetable oil
    1/2 cup flour (recipe is calculated with white flour, but you could definately use whole wheat).
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 1/4 cups blueberries, fresh or frozen

Directions

Makes 12 generous sized muffins.

Mix bran and milk. Set aside for 10 minutes.
Beat egg, egg white, oil, Fruitsations (or apple sauce), vanilla and brown sugar together. Mix in bran and milk mixture. Mix in dry ingredients just until mixed, and fold in blueberries. Bake in non stick pan or use paper liners.

Bake at 375 for 20-25 minutes.

  • This was a good muffin recipe. I added more whole wheat flour and used raisins instead of blueberries. I used 1/3 cup brown sugar and 1/3 cup of honey. Moist and delicious. - 11/2/09
