Cinnamon Carrot Salad

Introduction

Serve hot or cold - this salad is refreshing. A great item for a picnic since there is no mayo! Serve hot or cold - this salad is refreshing. A great item for a picnic since there is no mayo!

Ingredients

    1 pound carrots
    1 clove garlic
    pinch of cinnamon
    0.5 tsp ground cumin
    juice of one lemon
    0.25 tsp granulated sugar
    salt & pepper
    1 tbsp olive oil

Directions

Peel carrots and boil whole in water with garlic for 7 minutes. Drain, discard garlic. Cut into quarter inch thick slices.

Mix together the remaining ingrediants to make a dressing. Pour the dressing over the carrots. Leave to marinate in the fridge for at least one hour covered.

You can add more cinnamon, some chili powder, red pepper flakes, or your own favorite seasoning to suit your tastes.

Even though it's not been measured, I assume this makes approx 3 cups. Makes 6 servings.
