Savory Veegetable Bread Pudding

Ingredients

    1 - 10 oz package fresh spinach - chopped
    6 - large eggs
    1 - cup 2% milk
    2 - tsp dijon mustard
    1 1/2 - tsp salt
    1 - tsp pepper
    3 - cups cubed ciabatta (or italian) bread - cubed 1 inch
    1 1/2 - cups monterey jack cheese
    1 1/2 - cups grated parmesan cheese
    1 - 8 oz pkg sliced mushrooms
    1 - red bell pepper
    1 - green bell pepper
    1 - small onion
    1 - tsp minced garlic
    2 - tbs olive oil
    1 - large (or 3 roma) tomato

Directions

1. Preheat oven to 350. Chop spinach coarsely.
2. Whisk together eggs and add milk, mustard, salt and pepper in large bowl. Stir in bread and monterey jack cheese.
3. Saute mushrooms, red bell pepper, green bell pepper, onion and garlic in olive oil over medium high for 8 minutes. Stir in spinach and tomato and saute 2 minutes. Fold vegetable mixture into egg mixture. Pour into lightly greased 11 x 7 inch baking dish. Sprinkle with parmesan cheese.
4. Bake at 350 for 35 to 40 minutes. Let stand for 5 minutes.
