New Fangled Veggie Pizza

Introduction

Ingredients

    Fillo dessert crust 8-9x13 sheets

    Basil Pesto I only used 1/8 cup instead of the normal serving size of 1/4 c. The recipe nutritional facts is based on the 1/4 c serving (could use any pesto for a different taste)

    Grated Parmesan Cheese

    Selection of fresh veggies
    suggestions: onion, mushrooms, black & green olives, tomatoes and colored bell peppers. The recipe is based on all except the olives.
    **when not in season suggestions: sun dried tomatoes, roasted red peppers, canned mushrooms, etc. also cut up and freeze onions and peppers when in season and use them when not in season.



Directions

Let Fillo crust thaw in refrigerator for 2 hours, Take out 5 fillo sheets and refreeze remaining sheets.

Spread melted butter on 1st sheet then place 2nd sheet on top and repeat with all sheets.

Spread pesto on top sheet, put veggies on pesto, and end with parmesan cheese.

Bake at 350 for about 10-12 minutes until cheese is slightly melted.

Can be eaten hot but even BETTER COLD!!! I think I like it better cold than hot.

Good for a meal or leftovers for a lite snack.
