Flourless Gluten-Free Chocolate Cake with Raspberries

Introduction

Number of Servings: 12

Ingredients

    1 1/2 cups semi-sweet chocolate chips
    2 cups garbanzo beans (chickpeas) cooked if fresh, drained if canned
    2 eggs
    1/2 cup egg substitute
    1 cup sugar
    3 tablespoons reduced-fat mayonnaise
    1/2 teaspoon baking powder
    1 tablespoon powdered sugar
    1/2 cup fresh raspberries



Directions

1. Place rack on middle level and pre-heat oven to 350 F.



2. In a small bowl, melt chocolate in microwave oven on medium power for two minutes.



3. In food processor or blender, combine beans, eggs and egg substitute, blending on high for thirty seconds. Add chocolate, sugar, mayonnaise and baking powder and process until smooth.



4. Pour mixture into 9 heart shaped non-stick baking pan or a round pan, baking for 45 minutes or until an inserted knife comes out clean.



5. Cool and dust with powdered sugar and serve with fresh raspberries as a garnish.



Makes 8 servings.

    I made this for a friend's birthday who has celiac disease and was pleasantly surprised. It is pretty sweet, but the raspberry sauce cut down on the sweetness. It was very chocolatey (almost like fudge) and the texture wasn't bad either. She kept the recipe so I guess she liked it too!!! - 5/14/08

    My husband and I were both skeptical, but we really enjoyed it. It was very dense and moist. It made me feel much less guilty than a similarly sized portion of traditional fudge cake. - 10/29/07

    I've made a similiar flourless chocolate cake for years. This was a nice variation. I also agree with the others, if you don't like it, (and never tried it) don't say anything. - 4/28/09

    My daughter wanted this cake for her birthday, and I made a double recipe (9" round pans) and set it up as a layer cake. It was filled and iced with a light cream cheese frosting. I can hardly call it healthy, but it is delicious! Be sure to cut small pieces, as the cake is rich. - 5/17/09

    Made this for dessert last night. I'm the only one gluten free and all four of us really enjoyed it. I didn't have egg substitute on hand so I used a total of 4 eggs. I sprinkled powdered sugar on top and then added fresh raspberries and drizzled with a few melted chocolate chips. - 9/15/13

    We tried it. Prior experience with chick peas helped me making this cake. I happen to love chick peas so it was nice and moist for me. I had to slap my husband's hand from going from seconds. - 4/28/09

    Whoever said this has 1 weight watchers point needs to recalculate. The figures given are for EACH SERVING, not for the whole cake. Each serving has 8 points, way too much for me to spend on a desert. - 4/28/09

    Yahoo! This recipe sounds great for those cake occasions for our family!     This recipe sounds interesting, but I am confused that the recipe says it makes 8 servings, but the calorie calc is for 12 servings. If you make this cake into 8 serving the calories per serving would be more like 380. - 9/7/13

    This is a great recipe for those that are intolerant to dairy and gluten...can't wait to make this for my sister!
    I will use Smart Balance Mayo, it tastes as good as regular,it's actually good for you, and will help with the cholesterol and calories. - 4/28/08

    ... After reading this recipe, and a few of the comments, I make a similar cake, but its made with gluten free flour,( NOT the one with the chickpeas)as opposed to the chickpeas. One could also use something like Almond Meal or Almond Flour. I prefer my cake to be more like ' cake' not fudge. - 3/15/14

    Has anyone tried a vegan version of this recipe? I may try substituting N-ergy egg replacer for all of the eggs (1/2 cup egg substitute - such as eggbeaters = 2 eggs). Also, would look for vegan mayonnaise. - 2/28/14

    any thing i have bought gluten free has been horrible. recently gluten free gnocchi and waffles - YUCK!!! thru out the entire things - very expensive lesson.
