Introduction

With less fat added to it. Can up tahini to 1/4 of cup if wanted With less fat added to it. Can up tahini to 1/4 of cup if wanted

Ingredients

    1 cup cooked eggplant, 1 garlic clove, 2 tbs lemon juice, 2 tbsp tahini, 3 tbsp fresh parsley, 3/4 tsp salt.

Directions

Bake eggplant at 350 degrees till softened which normally takes about 25 minutes then peel off skin and blend with the rest of the ingredients.
