SPINACH PIE

Introduction

For real veggie eaters I make spinach pie instead of quiche. More veggies! Also good using broccoli & ham, broccoli & chopped chicken or shredded cabbage and 1 pork sausage chopped. Ingredients

    Frozen pie crust
    12 - 16 oz Frozen Chopped Spinach
    3 Eggs
    2 Cups Cottage Cheese
    1 Tbsp Black Pepper
    2 Slices bacon cooked and crumbled or real bacon crumbles found in salad dressing section of store.

Directions

Pre-heat oven to 350. Set out pie crust. Put spinach in strainer and rinse to thaw and let drain/dry. In blender or food processor put eggs, cottage cheese, pepper, crumbled bacon and onions. Blend until whipped and smooth. Put 1/2 mixture into pie crust, load with spinach and pour remainder on top. Bake at 350 for 40 minutes.
makes 6 servings.
