IntroductionThis is an unusual but delicious dish to serve on those days when you just want something different. This is an unusual but delicious dish to serve on those days when you just want something different.
8 chicken breasts, skinless and boneless
4 tbsp butter, unsalted
4 tbsp olive oil
salt and pepper to taste
1/2 cup orange juice
2 cups chicken broth
2 sprigs thyme
4 tbsp butter, unsalted, cut into bits
Put 2 tbsp of the butter and 2 tbsp of olive oil into a large heavy skillet and place it over high heat for 2 minutes. Season the chicken breasts with salt and pepper. Place 4 of the breasts in the pan and sear for 1 minute or until golden brown. Turn the breasts over and repeat on other side. Remove to a baking dish and repeat with 2 tbsp butter, remaining 2 tbsp olive oil and chicken breasts. Place the baking dish into the oven for 10-15 minutes, or until meat thermometer reads 170 degrees F.
Meanwhile, add orange juice, chicken broth and thyme to the hot skillet. Cook until reduced by about 3/4 (sauce should coat the back of a spoon). Right before serving, whisk in the remaining 4 tbsp butter. Season with salt and pepper.
Serve chicken with the sauce spooned over the top.
