DMC's Gnocchi (1cup serving)kec

Ingredients

    2 cups cooled Riced Potatoes (russets)
    2 cups Flour, All Purpose
    1 large Egg, beaten

Directions

Cook whole potatoes 30 min after start of boil. Let cool, peel and put through a potato ricer (for best results). In a bowl mix all the ingredients. Roll into "finger" sized ropes and cut into 1 to 2 inch pieces. Roll over the tines of a fork. Freeze on a floured cookie sheet, then pack in zip-lock bags. To cook, boil water, shake off the excess flour from the gnocchi through a fine strainer. Add to the boiling water and cook . When they float to the top, cook them 5 minutes more and remove. Serve with your favorite sauce and Enjoy!
