Cherry Coffee Cake



Introduction

This is a Great Any Time Cake. You can change the filling as you like. (Some examples: pineapple & coconut or blueberry and lemon or strawberry's & chocolate chips or apple and raisins etc, use your imagination) This is a Great Any Time Cake. Ingredients

    Cake:
    1/3 Cup Light Margarine, Softened
    1/3 Cup Shortening
    2 Cup Sugar
    1 Egg
    3 Cups Flour
    2 Tsp Baking Powder
    1 Tsp Ground Cinnamon
    1/2 Tsp Baking Soda
    1-3/4 Buttermilk
    1 Can Light Cherry Pie Filling
    1 Package 100 Calorie Pack Almonds, Crushed

    Topping:
    1/2 Cup Flour
    1/3 Cup Packed Brown Sugar
    1 Tsp Ground Cinnamon
    3 Tbsp Cold Light Margarine

    Glaze:
    1 Cup Powdered Sugar
    1 Tbsp Corn Syrup
    1-2 Tbsp Water

    (*2 Tbsp Flaked Coconut (you may omit) )

Directions

In a Large mixing bowl, beat butter, shortening and sugar until fluffy. Add egg and beat well. In a separate bowl combine the flour, baking powder, cinnamon and baking soda. Add to creamed mixture, alternating with buttermilk.

Spoon half of the batter into a greased 13x9x2 baking dish sprayed with butter spray. Top with entire can of cherry pie filling leaving 2 inchs on each side. Top with crushed almonds and then with remaining batter.

In a small bowl, combine the flour, brown sugar and cinnamon cut in margarine until crumbly. Sprinkle over batter. Bake at 350 for 55-60 minutes until a toothpick inserted in the center comes out clean.

Cool on Wire rack. Combine glaze ingredients, drizzle over coffee cake. Then sprinkle coconut over top.

  • I took this to a brunch today using the Cherry and pecan's filling and needless to say people had seconds & my Uncle had 3 servings himself!! The entire cake (cut into 20) was GONE, there were only 14 of us.... What rave reviews, it should get 10 stars if it could and I even omitted the coconut. - 9/1/09
