The big breakfast bake

Introduction

This is what I make on a Sunday for my weekday breakfasts. I cut into six slices, and freeze and then reheat each day for a quick and tasty breakfast that is high in protein.
I have used nutritional info for ingredients that are readily available in the UK so you may need to alter for US ingredients. The sausages I use are flavored vegetarian ones, really tasty, but low in fat.

Number of Servings: 6

Ingredients

    5 meat free sausages
    6 low fat turkey rashers chopped up
    1 cup of mushrooms chopped
    4 eggs beaten
    1 cup of 1% cottage cheese

Directions

preheat oven to 190C
grill sausages, then chop into bite size pieces
roughly chop mushrooms and turkey rashers.
place all of these evenly in ovenproof dish that has been sprayed with cooking spray.
mix cottage cheese with eggs, pour over breakfast items. bake for 25 - 30 mins
slice into six slices when cooled slightly
