Joetta's dried fruit and walnut oatmeal cookies

Introduction

I used dried cranberries here, but they can be substituted without much change in calories.
My family did like the cookies made with chopped dried apricots and chopped toasted almonds.

Number of Servings: 45

Ingredients

    1/2 cup Brown sugar
    1/2 cup Splenda sugar blend for baking
    1 cup move over butter
    1/2 cup egg beaters
    3 T nonfat milk
    2 tsp vanilla extract
    3 1/2 cups old fashioned oats
    1 cup flour
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 1/2 cups dried cranberries
    1 cup chopped walnuts

Directions

Beat sugars and "butter" until creamy. Add egg product, milk, vanilla; mix well. Combine oats, flour, baking powder, baking soda, and salt in separate bowl. Add to other mixture; mix well. Stir in dried fruit and walnuts. Chill dough 1 hour. Preheat oven to 350 degrees F. Drop with tablespoon sized scoop onto ungreased cookie sheet. Bake 10-12 minutes. Let stand 5 minutes before removing to racks to cool.

Makes about 45 cookies.
