Lindy's Pepper and Corn Vegetarian Chili

Lindy's Pepper and Corn Vegetarian Chili

Introduction

I made up this recipe while trying to use up an abundance of peppers and other produce from the farmer's market. For those who like really hot chili, you may need to add a more red pepper flakes or chili powder to suit your taste. Add a bit of chopped, fresh cilantro for a garnish if desired.

Also, if you are looking for recipes that will freeze well, this one is great for freeze and reheat convenience.
